Delicious and sweet Pineapple Crumb Bars with a buttery crust and a fruity pineapple filling.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 can (20 ounces) crushed pineapple, drained
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easier removal.
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
- Add the softened butter, egg, and vanilla extract to the dry ingredients. Use a fork or pastry cutter to mix until crumbly. Reserve 1 cup of the crumb mixture for topping.
- Press the remaining crumb mixture evenly into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix the drained crushed pineapple, brown sugar, cornstarch, and lemon juice until well combined. Spread the pineapple mixture evenly over the crust.
- Sprinkle the reserved crumb mixture over the pineapple layer.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
- Allow the bars to cool completely in the pan before cutting into squares.
Notes
- For a tropical twist, add shredded coconut to the crumb mixture or the pineapple filling.
- Substitute the crushed pineapple with other fruits like peaches or blueberries for different flavor profiles.
