Ingredients
- 1 pound salmon fillet
- 1 cup fresh pineapple, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Preheat your grill or oven to 400°F (200°C). If using a grill, lightly oil the grates to prevent sticking.
- In a medium bowl, combine the diced pineapple, soy sauce, honey, olive oil, minced garlic, grated ginger, black pepper, and red pepper flakes. Mix well to create the glaze.
- Place the salmon fillet on a large piece of aluminum foil or a baking dish. Pour half of the pineapple glaze over the salmon, reserving the other half for later.
- If grilling, wrap the salmon in the foil to create a sealed packet. If baking, simply place the dish in the oven.
- Grill the salmon for about 15-20 minutes or bake in the oven for 12-15 minutes, until the salmon is cooked through and flakes easily with a fork.
- During the last 5 minutes of cooking, brush the reserved glaze over the salmon for added flavor.
- Remove from heat and let rest for a few minutes. Garnish with sliced green onions before serving.
Notes
- For a tropical twist, add a tablespoon of lime juice to the glaze for extra brightness.
- Serve the salmon over a bed of coconut rice or alongside grilled vegetables for a complete meal.
