Description
Delicious and easy-to-make Pineapple Grilled Chicken Kebabs, perfect for summer grilling.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup fresh pineapple, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Wood or metal skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
- In a large bowl, combine soy sauce, olive oil, honey, garlic, ginger, black pepper, and salt. Whisk until well blended.
- Add the chicken cubes to the marinade, cover, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, pineapple, bell peppers, and onion onto the skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.
- Remove from the grill and let rest for a few minutes before serving. Serve with extra pineapple or a side salad if desired.
Notes
- For a spicier kick, add some red pepper flakes to the marinade.
- You can substitute the chicken with shrimp or tofu for a different protein option.
