Description

Delicious and easy-to-make Pineapple Grilled Chicken Kebabs, perfect for summer grilling.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Wood or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a large bowl, combine soy sauce, olive oil, honey, garlic, ginger, black pepper, and salt. Whisk until well blended.
  2. Add the chicken cubes to the marinade, cover, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, pineapple, bell peppers, and onion onto the skewers, alternating between the ingredients.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.
  6. Remove from the grill and let rest for a few minutes before serving. Serve with extra pineapple or a side salad if desired.

Notes

  • For a spicier kick, add some red pepper flakes to the marinade.
