Description

Pineapple Heaven Cheesecake is a dreamy tropical treat that combines the rich flavors of cream cheese and pineapple, creating a delightful dessert perfect for any occasion.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup crushed pineapple, drained
  • 1/2 teaspoon coconut extract (optional)
  • 1 cup whipped cream (for topping)
  • Fresh pineapple slices (for garnish)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  4. Add the sour cream, crushed pineapple, and coconut extract (if using) to the cream cheese mixture. Mix until everything is well incorporated and smooth.
  5. Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  8. Before serving, top with whipped cream and garnish with fresh pineapple slices.

Notes

  • For a tropical twist, try adding shredded coconut to the crust or the filling.
  • You can also substitute the crushed pineapple with other fruits like mango or peach for a different flavor.
