Description

A delicious and visually stunning Pineapple Upside Down Bundt Cake that combines the sweetness of pineapple and cherries with a moist cake.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 can (20 ounces) sliced pineapple in juice, drained and juice reserved
  • 1 cup maraschino cherries, drained
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  6. Pour ½ cup of the reserved pineapple juice into the bottom of the prepared Bundt pan. Arrange the pineapple slices in a decorative pattern on top of the juice. Place a maraschino cherry in the center of each pineapple slice and sprinkle the chopped nuts around.
  7. Carefully pour the cake batter over the pineapple and cherries, smoothing the top with a spatula.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then invert onto a serving plate and let cool completely.

Notes

  • For a tropical twist, add shredded coconut to the batter or as a topping.
  • Substitute the buttermilk with Greek yogurt for a richer texture.
