Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (20 ounces) sliced pineapple in juice, drained (reserve juice)
  • ½ cup packed brown sugar
  • ¼ cup unsalted butter, melted
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter until light and fluffy. Add the buttermilk, eggs, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. In a separate bowl, combine the reserved pineapple juice, brown sugar, and melted butter. Pour this mixture into the bottom of the prepared baking dish.
  6. Arrange the pineapple slices over the brown sugar mixture in a single layer. If desired, place a maraschino cherry in the center of each pineapple slice.
  7. Pour the cake batter evenly over the pineapple layer.
