Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 can (20 ounces) sliced pineapple in juice, drained (reserve juice)
- ½ cup packed brown sugar
- ¼ cup unsalted butter, melted
- Maraschino cherries (optional, for garnish)
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter until light and fluffy. Add the buttermilk, eggs, and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a separate bowl, combine the reserved pineapple juice, brown sugar, and melted butter. Pour this mixture into the bottom of the prepared baking dish.
- Arrange the pineapple slices over the brown sugar mixture in a single layer. If desired, place a maraschino cherry in the center of each pineapple slice.
- Pour the cake batter evenly over the pineapple layer.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes. Carefully invert the cake onto a serving platter.
- Serve warm or at room temperature.
Notes
- For a tropical twist, add shredded coconut to the batter or top the cake with toasted coconut before serving.
- You can also substitute the pineapple with other fruits like peaches or cherries for a different flavor.
