Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup crushed pineapple, drained
  • ½ cup brown sugar, packed
  • 12 maraschino cherries

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. In a small bowl, combine the drained crushed pineapple and brown sugar. Stir until the pineapple is well coated.
  5. Scoop about 1 tablespoon of cookie dough and flatten it slightly in your palm. Place a teaspoon of the pineapple mixture in the center and fold the dough around it to form a ball. Repeat with the remaining dough.
  6. Place the cookie balls on the prepared baking sheet, leaving about 2 inches between each cookie. Press a maraschino cherry into the center of each cookie.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
