Ingredients
- 1 cup pitted Medjool dates, packed
- 1 cup unsalted pistachios, shelled
- 1 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 tablespoon coconut oil (melted)
Instructions
- In a food processor, combine the pitted dates, pistachios, shredded coconut, vanilla extract, sea salt, and melted coconut oil.
- Pulse the mixture until it becomes a sticky, cohesive dough. You may need to scrape down the sides of the bowl a few times to ensure everything is well combined.
- Once the mixture is ready, use your hands to form small balls, about 1 inch in diameter.
- Roll each ball in additional shredded coconut for a decorative touch, if desired.
- Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store the energy bites in an airtight container in the refrigerator for up to one week.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the mixture before blending.
