Pistachio Coconut Energy Bites are a delicious and nutritious treat made with Medjool dates, pistachios, and shredded coconut, perfect for a quick energy boost.


Ingredients

  • 1 cup pitted Medjool dates, packed
  • 1 cup unsalted pistachios, shelled
  • 1 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut oil (melted)

Instructions

  1. In a food processor, combine the pitted dates, pistachios, shredded coconut, vanilla extract, sea salt, and melted coconut oil.
  2. Pulse the mixture until it becomes a sticky, cohesive dough. You may need to scrape down the sides of the bowl a few times to ensure everything is well combined.
  3. Once the mixture is ready, use your hands to form small balls, about 1 inch in diameter.
  4. Roll each ball in additional shredded coconut for a decorative touch, if desired.
  5. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Store the energy bites in an airtight container in the refrigerator for up to one week.
