Ingredients
For the Pistachio Cheesecake:
- 8 oz cream cheese, softened
- ¼ cup pistachio paste
- ½ cup heavy cream, whipped
- ⅓ cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon gelatin, bloomed in 2 tablespoons water
For the Raspberry Center:
- ½ cup fresh raspberries
- 2 tablespoons sugar
- 2 tablespoons water
- 1 teaspoon gelatin, bloomed in 1 tablespoon water
For the Green Glaze:
- ½ cup sweetened condensed milk
- ½ cup white chocolate, chopped
- 1 teaspoon gelatin, bloomed in 2 tablespoons water
- Green gel food coloring
For Decoration:
- Edible gold leaf
- Crushed pistachios
Instructions
- Create the Raspberry Center: In a saucepan, simmer raspberries, sugar, and water until softened. Strain to remove seeds, then mix with bloomed gelatin. Pour into small molds and freeze until solid.
- Prepare the Cheesecake Base: In a bowl, blend cream cheese, pistachio paste, and sugar. Fold in whipped heavy cream and bloomed gelatin until smooth.
- Assemble the Domes: Fill silicone molds halfway with cheesecake mixture. Insert frozen raspberry centers, then top with remaining cheesecake mixture. Smooth the tops and freeze for at least 4 hours or overnight.
- Make the Green Glaze: Heat condensed milk and white chocolate until smooth. Stir in bloomed gelatin and green food coloring. Let cool slightly.
- Glaze the Domes: Unmold the frozen cheesecakes and place on a wire rack. Pour the green glaze evenly over the domes.
- Garnish & Serve: Decorate with crushed pistachios and edible gold leaf for a luxurious touch. Serve chilled and enjoy!
