Ingredients

  • 1 cup shelled pistachios, finely chopped
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 1/4 cup coffee liqueur (optional)
  • 12 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a medium bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat until soft peaks form and the mixture is smooth and creamy.
  2. In a shallow dish, mix the brewed espresso and coffee liqueur (if using). Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
  3. In serving cups or small glasses, layer the bottom with a few soaked ladyfingers.
  4. Spoon a layer of the mascarpone mixture over the ladyfingers, followed by a sprinkle of chopped pistachios.
  5. Repeat the layers until the cups are filled, finishing with a layer of the mascarpone mixture on top.
  6. Cover and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, dust the tops with cocoa powder and garnish with additional chopped pistachios.
