Ingredients
- 1 cup shelled pistachios, finely chopped
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 1/4 cup coffee liqueur (optional)
- 12 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a medium bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat until soft peaks form and the mixture is smooth and creamy.
- In a shallow dish, mix the brewed espresso and coffee liqueur (if using). Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
- In serving cups or small glasses, layer the bottom with a few soaked ladyfingers.
- Spoon a layer of the mascarpone mixture over the ladyfingers, followed by a sprinkle of chopped pistachios.
- Repeat the layers until the cups are filled, finishing with a layer of the mascarpone mixture on top.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the tops with cocoa powder and garnish with additional chopped pistachios.
Notes
- For a lighter version, substitute half of the mascarpone cheese with Greek yogurt.
- Add a layer of chocolate shavings or a drizzle of chocolate sauce between the layers for an extra indulgent treat.
