Ingredients

  • 2 cups grated potatoes (about 2 medium potatoes)
  • 1 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. Start by peeling and grating the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated potatoes, shredded cheddar cheese, flour, eggs, salt, black pepper, garlic powder, onion powder, and green onions (if using). Mix until well combined.
  3. Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, scoop about 1/4 cup of the potato mixture and flatten it slightly into a pancake shape. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
