Description

Pumpkin Lush is a delicious layered dessert that combines creamy pumpkin and cream cheese flavors, perfect for fall gatherings.

Ingredients

  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip)
  • 1 can (15 oz) pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 package (9 oz) graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 cup chopped pecans (optional)
  • Additional whipped topping for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the graham cracker mixture into the bottom of a 9×13 inch baking dish to form a crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
  5. Fold in the whipped topping until fully incorporated.
  6. Spread the cream cheese mixture evenly over the cooled crust.
  7. In another bowl, mix the pumpkin puree, vanilla extract, and pumpkin pie spice until well blended.
  8. Spread the pumpkin mixture over the cream cheese layer.
  9. Cover the dish with plastic wrap and refrigerate for at least 2 hours to set.
  10. Before serving, sprinkle chopped pecans on top (if using) and add additional whipped topping for garnish.

Notes

  • For a spicier flavor, add an extra 1/2 teaspoon of pumpkin pie spice to the pumpkin layer.
  • Substitute the pecans with walnuts or leave them out entirely for a nut-free version.
