Pumpkin Lush is a delicious layered dessert that combines creamy pumpkin and cream cheese flavors, perfect for fall gatherings.
Ingredients
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping (like Cool Whip)
- 1 can (15 oz) pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 package (9 oz) graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 cup chopped pecans (optional)
- Additional whipped topping for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the graham cracker mixture into the bottom of a 9×13 inch baking dish to form a crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
- Fold in the whipped topping until fully incorporated.
- Spread the cream cheese mixture evenly over the cooled crust.
- In another bowl, mix the pumpkin puree, vanilla extract, and pumpkin pie spice until well blended.
- Spread the pumpkin mixture over the cream cheese layer.
- Cover the dish with plastic wrap and refrigerate for at least 2 hours to set.
- Before serving, sprinkle chopped pecans on top (if using) and add additional whipped topping for garnish.
Notes
- For a spicier flavor, add an extra 1/2 teaspoon of pumpkin pie spice to the pumpkin layer.
- Substitute the pecans with walnuts or leave them out entirely for a nut-free version.
