A delightful Pumpkin Pecan Cobbler Cheesecake that combines the flavors of pumpkin and pecans in a creamy cheesecake.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup canned pumpkin puree
- 1 teaspoon pumpkin pie spice
- ½ teaspoon ground cinnamon
- 1 cup chopped pecans
- ½ cup brown sugar
- 1 tablespoon all-purpose flour
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the cream cheese with an electric mixer until smooth.
- Gradually add granulated sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, combine pumpkin puree, pumpkin pie spice, and ground cinnamon. Gently fold the pumpkin mixture into the cream cheese mixture until fully incorporated.
- Pour the pumpkin cheesecake mixture over the cooled crust in the springform pan.
- In a small bowl, mix together chopped pecans, brown sugar, and flour. Sprinkle this mixture evenly over the top of the cheesecake.
- Bake for 50-60 minutes, or until the center is set and a toothpick inserted comes out clean.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, consider adding a teaspoon of maple extract to the cheesecake mixture.
- You can substitute the pecans with walnuts or almonds for a different nutty flavor.
- Serve with whipped cream or a drizzle of caramel sauce for an extra treat.
