Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (15 ounces) pumpkin puree
  • 1 teaspoon vanilla extract
  • For the praline topping:
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared baking pan and smooth the top.
  5. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  6. While the cake is cooling, prepare the praline topping. In a medium saucepan over medium heat, combine the chopped pecans, brown sugar, butter, heavy cream, and vanilla extract. Stir constantly until the mixture comes to a boil. Allow it to boil for 1-2 minutes, then remove from heat.
  7. Once the cake has cooled, pour the praline topping over the top, spreading it evenly. Let it set for about 15 minutes before slicing.
