Pumpkin Spice Pavlova is a light and airy dessert that captures the essence of fall with its delightful pumpkin spice flavor.


Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper and draw a 9-inch circle on the parchment as a guide. Flip the parchment over so the ink side is down.
  2. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.
  3. Gently fold in the vanilla extract, white vinegar, cornstarch, pumpkin pie spice, and salt until just combined. Be careful not to deflate the egg whites.
  4. Spoon the meringue mixture onto the prepared parchment paper, using the circle as a guide. Create a slight well in the center to hold the filling later.
  5. Bake in the preheated oven for 1 hour. Once done, turn off the oven and leave the pavlova inside with the door slightly ajar for about 1 hour to cool completely. This helps prevent cracking.
  6. While the pavlova cools, whip the heavy cream and powdered sugar in a separate bowl until soft peaks form.
  7. In another bowl, combine the pumpkin puree, cinnamon, and nutmeg. Gently fold this mixture into the whipped cream until well blended.
  8. Once the pavlova is completely cool, carefully remove it from the parchment paper and place it on a serving platter.
  9. Spoon the pumpkin spice whipped cream into the center of the pavlova, spreading it gently to the edges.
  10. Garnish with fresh mint leaves if desired and serve immediately.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the meringue mixture.
  • If you want a more festive presentation, top the pavlova with caramel sauce or chopped pecans before serving.
