Pumpkin Spice Pavlova is a light and airy dessert that captures the essence of fall with its delightful pumpkin spice flavor.
Ingredients
- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 cup pumpkin puree
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper and draw a 9-inch circle on the parchment as a guide. Flip the parchment over so the ink side is down.
- In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.
- Gently fold in the vanilla extract, white vinegar, cornstarch, pumpkin pie spice, and salt until just combined. Be careful not to deflate the egg whites.
- Spoon the meringue mixture onto the prepared parchment paper, using the circle as a guide. Create a slight well in the center to hold the filling later.
- Bake in the preheated oven for 1 hour. Once done, turn off the oven and leave the pavlova inside with the door slightly ajar for about 1 hour to cool completely. This helps prevent cracking.
- While the pavlova cools, whip the heavy cream and powdered sugar in a separate bowl until soft peaks form.
- In another bowl, combine the pumpkin puree, cinnamon, and nutmeg. Gently fold this mixture into the whipped cream until well blended.
- Once the pavlova is completely cool, carefully remove it from the parchment paper and place it on a serving platter.
- Spoon the pumpkin spice whipped cream into the center of the pavlova, spreading it gently to the edges.
- Garnish with fresh mint leaves if desired and serve immediately.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the meringue mixture.
- If you want a more festive presentation, top the pavlova with caramel sauce or chopped pecans before serving.
