Description
A delightful Purple Velvet Cake Roll filled with creamy cheese filling, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk, room temperature
- 3 large eggs
- 2 tablespoons purple food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 15×10-inch jelly roll pan with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the vegetable oil, buttermilk, eggs, purple food coloring, vanilla extract, and almond extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined and no lumps remain.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
- Once the cake is done, remove it from the oven and immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
- Starting from one short end, roll the cake up with the towel inside. Let it cool completely in this rolled position for about 1 hour.
- Meanwhile, make the cream cheese filling by beating the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Once the cake is completely cool, unroll it gently. Spread the cream cheese filling evenly over the cake, leaving a small border around the edges.
- Roll the cake back up without the towel, starting from the short end. Wrap it in plastic wrap and refrigerate for at least 2 hours before slicing.
- Serve chilled or at room temperature, slicing into 1-inch pieces.
Notes
- For added flavor, consider adding a teaspoon of lemon zest to the cream cheese filling.
- You can substitute the purple food coloring with natural beet juice for a more vibrant color and a hint of sweetness.
