Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 15×10-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, purple food coloring, vanilla extract, and almond extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined and no lumps remain.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

  10. Once the cake is completely cool, unroll it gently. Spread the cream cheese filling evenly over the cake, leaving a small border around the edges.
  11. Roll the cake back up without the towel, starting from the short end. Wrap it in plastic wrap and refrigerate for at least 2 hours before slicing.
