A quick and easy recipe for bok choy sautéed with a flavorful ginger chili sauce, perfect as a side dish or light meal.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound baby bok choy, halved lengthwise
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon chili paste (adjust to taste)
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds (optional)
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the halved bok choy to the skillet, cut side down. Cook for 2-3 minutes until the bok choy starts to wilt.
- Stir in the soy sauce, rice vinegar, chili paste, and sesame oil. Toss to coat the bok choy evenly.
- Cook for an additional 2-3 minutes until the bok choy is tender but still bright green. Season with salt and pepper to taste.
- Remove from heat and sprinkle with sesame seeds if using. Serve immediately.
Notes
- For added protein, toss in some cooked chicken or tofu during the last few minutes of cooking.
- Try adding a splash of lime juice for a zesty twist or substitute bok choy with other leafy greens like kale or spinach.
