A quick and delicious bok choy dish with a flavorful ginger chili sauce, perfect as a side or light meal.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound bok choy, halved lengthwise
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste (adjust to taste)
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 tablespoon sesame seeds (optional)
- Chopped green onions for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced ginger and garlic, sautéing for about 30 seconds until fragrant.
- Add the bok choy to the skillet, cut side down, and stir-fry for 2-3 minutes until it starts to wilt.
- In a small bowl, mix together the soy sauce, rice vinegar, chili paste, sesame oil, and sugar.
- Pour the sauce over the bok choy and continue to stir-fry for another 2-3 minutes until the bok choy is tender but still crisp.
- Remove from heat and sprinkle with sesame seeds and chopped green onions if desired.
- Serve immediately as a side dish or over rice for a light meal.
Notes
- For added protein, toss in some cooked chicken or tofu during the last few minutes of cooking.
- Experiment with different vegetables like snap peas or bell peppers for a colorful stir-fry.
