Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound bok choy, halved lengthwise
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste (adjust to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon sesame seeds (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced ginger and garlic, sautéing for about 30 seconds until fragrant.
  3. Add the bok choy to the skillet, cut side down, and stir-fry for 2-3 minutes until it starts to wilt.
  4. In a small bowl, mix together the soy sauce, rice vinegar, chili paste, sesame oil, and sugar.
  5. Pour the sauce over the bok choy and continue to stir-fry for another 2-3 minutes until the bok choy is tender but still crisp.
  6. Remove from heat and sprinkle with sesame seeds and chopped green onions if desired.
  7. Serve immediately as a side dish or over rice for a light meal.
