Description

This Chicken Cottage Cheese Salad is a high-protein, flavor-packed dish that blends savory chicken with the natural sweetness of apricots and a hint of curry. Tossed in a creamy cottage cheese and mayo dressing, it’s a refreshing and nutrient-dense salad perfect for meal prep, light lunches, or post-workout fuel.


Ingredients

For the Salad:

  • 2 cups (280g) cooked chicken, diced or shredded

  • ½ medium red onion, finely chopped

  • 8 dried apricots, finely chopped

  • 5 tablespoons fresh cilantro (coriander), finely chopped

  • 1 teaspoon curry powder

  • Salt, to taste

  • Black pepper, to taste

For the Dressing:

  • ¾ cup (160g) cottage cheese

  • 2 tablespoons mayonnaise (regular or light)


Instructions

  • Make the Creamy Dressing
    In a small blender or using a hand blender, blend cottage cheese and mayonnaise together until smooth and creamy.

  • Mix the Salad Base
    In a large mixing bowl, combine the cooked chicken, red onion, chopped apricots, cilantro, and curry powder.

  • Combine with Dressing
    Pour the dressing over the salad ingredients. Stir thoroughly until everything is evenly coated.

 

  • Season and Chill
    Season with salt and black pepper to taste. For best flavor, refrigerate for about 30 minutes before serving.

Notes

  • Great served on whole grain toast, in lettuce wraps, or on its own.

  • Swap dried apricots with raisins or cranberries for variation.

  • Make it lighter by using Greek yogurt instead of mayonnaise.
