Description
Quinoa Veggie Bites are a healthy and easy snack made with quinoa and a variety of vegetables, perfect for any occasion.
Ingredients
- 1 cup cooked quinoa
- 1 cup grated zucchini (about 1 medium zucchini)
- 1 cup grated carrots (about 2 medium carrots)
- 1/2 cup chopped bell pepper (any color)
- 1/4 cup chopped green onions
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 2 large eggs
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil (for greasing the baking sheet)
Instructions
- Preheat your oven to 375°F.
- Grease a baking sheet with olive oil or line it with parchment paper.
- In a large bowl, combine the cooked quinoa, grated zucchini, grated carrots, chopped bell pepper, chopped green onions, and shredded cheese. Mix well.
- In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, black pepper, and paprika.
- Pour the egg mixture into the quinoa and veggie mixture, stirring until everything is well combined.
- Gradually add the breadcrumbs, mixing until the mixture holds together.
- Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until the bites are golden brown and firm to the touch.
- Allow to cool slightly before serving.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or some chopped jalapeños to the mixture.
- You can also substitute the veggies with any of your favorites, such as spinach or corn, to customize the flavor.
