Description

Quinoa Veggie Bites are a healthy and easy snack made with quinoa and a variety of vegetables, perfect for any occasion.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped green onions
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 2 large eggs
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil (for greasing the baking sheet)

Instructions

  1. Preheat your oven to 375°F.
  2. Grease a baking sheet with olive oil or line it with parchment paper.
  3. In a large bowl, combine the cooked quinoa, grated zucchini, grated carrots, chopped bell pepper, chopped green onions, and shredded cheese. Mix well.
  4. In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, black pepper, and paprika.
  5. Pour the egg mixture into the quinoa and veggie mixture, stirring until everything is well combined.
  6. Gradually add the breadcrumbs, mixing until the mixture holds together.
  7. Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  8. Bake for 20-25 minutes, or until the bites are golden brown and firm to the touch.
  9. Allow to cool slightly before serving.

Notes

  • For a spicier kick, add 1/4 teaspoon of cayenne pepper or some chopped jalapeños to the mixture.
  • You can also substitute the veggies with any of your favorites, such as spinach or corn, to customize the flavor.
