A delicious and indulgent dessert that layers chocolate and raspberry flavors in a creamy lasagna style.
Ingredients
- 2 cups chocolate sandwich cookies, crushed
- ½ cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups whipped topping, divided
- 1 cup fresh raspberries
- 1 cup chocolate pudding mix
- 2 cups milk
- 1 cup semi-sweet chocolate chips
- Fresh raspberries and chocolate shavings for garnish
Instructions
- In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust. Chill in the refrigerator for 10 minutes.
- In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in 1 cup of the whipped topping until well combined. Spread this mixture over the chilled cookie crust.
- Evenly distribute the fresh raspberries over the cream cheese layer.
- In another bowl, whisk together the chocolate pudding mix and milk for about 2 minutes until thickened. Spread the chocolate pudding over the raspberry layer.
- Top the pudding layer with the remaining whipped topping, spreading it evenly.
- Melt the semi-sweet chocolate chips in the microwave in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the whipped topping.
- Garnish with additional fresh raspberries and chocolate shavings. Cover and refrigerate for at least 4 hours or overnight for best results.
Notes
- For a lighter version, substitute the cream cheese with Greek yogurt and use sugar-free pudding mix.
- You can also swap out the raspberries for strawberries or blueberries for a different flavor profile.
