Description

A delicious and indulgent dessert that layers chocolate and raspberry flavors in a creamy lasagna style.


Ingredients

  • 2 cups chocolate sandwich cookies, crushed
  • ½ cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping, divided
  • 1 cup fresh raspberries
  • 1 cup chocolate pudding mix
  • 2 cups milk
  • 1 cup semi-sweet chocolate chips
  • Fresh raspberries and chocolate shavings for garnish

Instructions

  1. In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust. Chill in the refrigerator for 10 minutes.
  2. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in 1 cup of the whipped topping until well combined. Spread this mixture over the chilled cookie crust.
  3. Evenly distribute the fresh raspberries over the cream cheese layer.
  4. In another bowl, whisk together the chocolate pudding mix and milk for about 2 minutes until thickened. Spread the chocolate pudding over the raspberry layer.
  5. Top the pudding layer with the remaining whipped topping, spreading it evenly.
  6. Melt the semi-sweet chocolate chips in the microwave in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the whipped topping.
  7. Garnish with additional fresh raspberries and chocolate shavings. Cover and refrigerate for at least 4 hours or overnight for best results.

Notes

  • For a lighter version, substitute the cream cheese with Greek yogurt and use sugar-free pudding mix.
