Ingredients

  • 1 package (3 oz) raspberry gelatin (Jell-O)
  • 1 cup boiling water
  • 1 can (20 oz) crushed pineapple, drained
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • 1 cup mini marshmallows
  • ½ cup sour cream (optional, for slight tanginess)
  • ½ cup chopped pecans or walnuts (optional)
  • Fresh raspberries (optional, for garnish)

Instructions

  1. In a large bowl, pour boiling water over the raspberry gelatin. Stir until completely dissolved.
  2. Let it cool at room temperature for about 10–15 minutes (do not let it set).
  3. Stir in the drained crushed pineapple.
  4. Gently fold in the whipped topping and sour cream (if using) until smooth and well combined.
  5. Stir in mini marshmallows and chopped nuts.
  6. Cover and refrigerate for at least 2–4 hours until fluffy and set.
