Ingredients
- 1 package (3 oz) raspberry gelatin (Jell-O)
- 1 cup boiling water
- 1 can (20 oz) crushed pineapple, drained
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 1 cup mini marshmallows
- ½ cup sour cream (optional, for slight tanginess)
- ½ cup chopped pecans or walnuts (optional)
- Fresh raspberries (optional, for garnish)
Instructions
- In a large bowl, pour boiling water over the raspberry gelatin. Stir until completely dissolved.
- Let it cool at room temperature for about 10–15 minutes (do not let it set).
- Stir in the drained crushed pineapple.
- Gently fold in the whipped topping and sour cream (if using) until smooth and well combined.
- Stir in mini marshmallows and chopped nuts.
- Cover and refrigerate for at least 2–4 hours until fluffy and set.
- Garnish with fresh raspberries if desired. Serve chilled.

- For a lighter version, you can omit the sour cream.
