Description

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm milk (110°F)
  • 1/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together sugar, eggs, vanilla extract, and salt.
  3. Add the yeast mixture and mix well.
  4. Gradually add flour, mixing until a dough forms.
  5. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  7. While the dough rises, prepare the raspberry filling by combining raspberries, lemon juice, and cornstarch in a small saucepan over medium heat. Cook for about 5 minutes until the raspberries break down and the mixture thickens. Remove from heat and let cool.
  8. Once the dough has risen, punch it down and roll it out into a rectangle about 1/2 inch thick.
  9. Spread the raspberry filling evenly over the dough, leaving a small border around the edges.
  10. Roll the dough tightly into a log and place it seam-side down in a greased loaf pan.
  11. Cover with a kitchen towel and let it rise for another 30-45 minutes.
  12. Preheat the oven to 350°F.
  13. Bake the loaf for 30-35 minutes or until golden brown and cooked through.
  14. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
