Ingredients

  • 1 cup fresh raspberries
  • 8 ounces white chocolate, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup crushed graham crackers (for coating)
  • 1/4 cup unsweetened cocoa powder (for coating)

Instructions

  1. In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chopped white chocolate. Stir until the chocolate is completely melted and the mixture is smooth.
  2. Gently fold in the fresh raspberries and vanilla extract until well combined.
  3. Transfer the mixture to a bowl and refrigerate for about 2 hours, or until it is firm enough to handle.
  4. Once the mixture is chilled, use a small cookie scoop or your hands to form small balls, about 1 inch in diameter.
  5. Roll the truffles in a mixture of crushed graham crackers and cocoa powder until fully coated.
