Ingredients
- 2 cups red velvet cake mix
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/4 cup milk
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup mini chocolate chips

- 1/4 cup brown sugar, packed (for cookie dough)
- 1 teaspoon vanilla extract (for cookie dough)
- 1 cup all-purpose flour (for cookie dough)
- 1/4 teaspoon salt (for cookie dough)
- 1/2 cup mini chocolate chips (for cookie dough)
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a large bowl, combine the red velvet cake mix, softened butter, egg, and milk. Mix until smooth and well combined.
- Press the mixture evenly into the bottom of the prepared springform pan.
- In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until creamy.
- Add the sour cream, eggs, flour, and salt, mixing until smooth. Fold in the mini chocolate chips.
- Pour the cheesecake mixture over the red velvet crust in the springform pan.
- In a separate bowl, make the cookie dough by creaming together the softened butter, granulated sugar, brown sugar, and vanilla extract.
- Stir in the flour and salt until combined, then fold in the mini chocolate chips.
- Drop spoonfuls of cookie dough over the cheesecake layer.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
Notes
- For a lighter version, substitute Greek yogurt for sour cream.
- For added flavor, drizzle melted white chocolate over the top before serving.
