Description
A delicious Red Velvet Strawberry cake recipe that combines the rich flavors of red velvet with fresh strawberries and cream cheese frosting.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 ½ cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 cup fresh strawberries, hulled and sliced
- 1 cup cream cheese frosting (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Once cooled, place one layer of cake on a serving plate. Spread a layer of cream cheese frosting on top and add half of the sliced strawberries.
- Place the second layer of cake on top and frost the top and sides with the remaining cream cheese frosting. Decorate with the remaining strawberries.
- Chill the cake in the refrigerator for at least 30 minutes before serving to set the frosting.
Notes
- For a richer flavor, add 1 teaspoon of almond extract to the wet ingredients.
- You can substitute the strawberries with raspberries or blueberries for a different berry flavor.
- For a fun twist, drizzle some chocolate ganache over the top before serving.
