A delicious and visually stunning dessert that combines the rich flavors of red velvet cake with a creamy strawberry cheesecake topping.
Ingredients
- 1 ½ cups red velvet cake mix
- ½ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 cup fresh strawberries, sliced
- Chocolate shavings or cocoa powder for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
- In a mixing bowl, combine the red velvet cake mix, melted butter, egg, and 1 teaspoon of vanilla extract. Mix until well combined and smooth.
- Pour the red velvet batter into the prepared cake pan and spread evenly. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
- In a separate bowl, beat the softened cream cheese and granulated sugar together until creamy and smooth. Add 1 teaspoon of vanilla extract and mix until well incorporated.
- In another bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Once the red velvet cake has cooled, remove it from the pan and place it on a serving plate. Spread the cream cheese mixture evenly over the top of the cake.
- Arrange the sliced strawberries on top of the cream cheese layer. If desired, sprinkle chocolate shavings or cocoa powder for garnish.
- Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
Notes
- For a richer flavor, add a tablespoon of cocoa powder to the cream cheese mixture.
- Substitute the strawberries with other berries like raspberries or blueberries for a different twist.
