Description

A refreshing and crunchy coleslaw made with apples and cranberries, perfect for summer gatherings.

Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup apples, diced (preferably Granny Smith)
  • 1/2 cup dried cranberries
  • 1/4 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the green cabbage, red cabbage, carrots, diced apples, dried cranberries, and green onions. Toss gently to mix the ingredients evenly.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until all the ingredients are well coated.
  4. Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the coleslaw a good stir and adjust seasoning if necessary.

Notes

  • For a crunchier texture, add a handful of chopped nuts such as walnuts or pecans.
  • You can also substitute the apples with pears for a different flavor profile.
  • For a lighter version, use Greek yogurt instead of mayonnaise.
