Description
A refreshing and crunchy coleslaw made with apples and cranberries, perfect for summer gatherings.
Ingredients
- 4 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup apples, diced (preferably Granny Smith)
- 1/2 cup dried cranberries
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrots, diced apples, dried cranberries, and green onions. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
- Pour the dressing over the cabbage mixture and toss until all the ingredients are well coated.
- Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the coleslaw a good stir and adjust seasoning if necessary.
Notes
- For a crunchier texture, add a handful of chopped nuts such as walnuts or pecans.
- You can also substitute the apples with pears for a different flavor profile.
- For a lighter version, use Greek yogurt instead of mayonnaise.
