A refreshing salad featuring thinly sliced cucumbers, a savory miso dressing, crispy shallots, and roasted peanuts.
Ingredients
- 2 large cucumbers, thinly sliced
- 1 teaspoon salt
- 1/4 cup white miso paste
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1/4 cup green onions, chopped
- 1/2 cup roasted peanuts, roughly chopped
- 1/2 cup shallots, thinly sliced
- 1/2 cup vegetable oil (for frying)
- 1 tablespoon sesame seeds (optional)
Instructions
- Place the sliced cucumbers in a colander and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture. Rinse and pat dry with paper towels.
- In a small bowl, whisk together the miso paste, rice vinegar, sesame oil, and honey (or maple syrup) until smooth. Adjust the sweetness to taste.
- In a skillet, heat the vegetable oil over medium heat. Add the sliced shallots and fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
- In a large bowl, combine the cucumbers, miso dressing, and chopped green onions. Toss gently to coat.
- Serve the salad topped with crispy shallots, roasted peanuts, and sesame seeds if desired.
Notes
- For added crunch, consider adding sliced radishes or shredded carrots to the salad.
- If you prefer a spicier kick, add a pinch of red pepper flakes or a drizzle of sriracha to the dressing.
