Ingredients

  • 1 cup corned beef, finely chopped
  • 1 cup sauerkraut, drained and chopped
  • 1 cup Swiss cheese, shredded

  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1 large egg, beaten

  • For the Spicy Thousand Island Dipping Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tablespoon relish
  • 1 teaspoon hot sauce (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the corned beef, sauerkraut, Swiss cheese, breadcrumbs, cream cheese, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into small balls, about 1 inch in diameter. Dip each ball into the beaten egg, then roll in additional breadcrumbs if desired for extra crunch.
  3. Heat oil in a deep skillet or fryer over medium heat. Once hot, carefully add the Reuben balls in batches, frying until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
