Ingredients

  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans (optional)
  • 1 cup mini marshmallows
  • For the frosting:
  • 1/2 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the granulated sugar and softened butter until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chopped pecans and mini marshmallows if using.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  10. For the frosting, melt the butter in a saucepan over medium heat. Stir in the cocoa powder and mix until smooth.
  11. Remove from heat and whisk in the powdered sugar, milk, and vanilla extract until well combined and creamy.
  12. Once the cake is completely cool, spread the frosting evenly over the top.
  13. Cut into squares and serve.

  • For a richer flavor, add a teaspoon of espresso powder to the batter.
