Ingredients
- 2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped pecans (optional)
- 1 cup mini marshmallows
- For the frosting:
- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, cream together the granulated sugar and softened butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped pecans and mini marshmallows if using.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
- For the frosting, melt the butter in a saucepan over medium heat. Stir in the cocoa powder and mix until smooth.
- Remove from heat and whisk in the powdered sugar, milk, and vanilla extract until well combined and creamy.
- Once the cake is completely cool, spread the frosting evenly over the top.
- Cut into squares and serve.
Notes
- For a richer flavor, add a teaspoon of espresso powder to the batter.
- If you prefer a chocolate glaze, melt 1 cup of chocolate chips with 1 tablespoon of butter and pour over the cooled cake instead of frosting.
