Description
A deliciously rich and gooey Mississippi Mud Cake that is baked to perfection, featuring layers of chocolate, marshmallows, and optional nuts.
Ingredients
- 2 cups granulated sugar
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup chopped pecans (optional)
- 1/2 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the granulated sugar, flour, cocoa powder, baking powder, and salt. Mix well.
- Add the melted butter, eggs, and vanilla extract to the dry ingredients. Stir until just combined, being careful not to overmix.
- Fold in the chocolate chips and, if using, the chopped pecans.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not completely clean).
- Remove the cake from the oven and immediately sprinkle the mini marshmallows on top. Return to the oven for an additional 5 minutes, or until the marshmallows are slightly puffed and golden.
- Allow the cake to cool in the pan for at least 15 minutes before dusting with powdered sugar and cutting into squares.
- Serve warm or at room temperature. For an extra treat, top with whipped cream or vanilla ice cream.
Notes
- For a richer flavor, try adding a teaspoon of instant coffee granules to the batter.
- You can substitute the pecans with walnuts or omit nuts altogether for a nut-free version.
- For a fun twist, drizzle caramel sauce over the top before serving.
