Description

A deliciously rich and gooey Mississippi Mud Cake that is baked to perfection, featuring layers of chocolate, marshmallows, and optional nuts.


Ingredients

  • 2 cups granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans (optional)
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the granulated sugar, flour, cocoa powder, baking powder, and salt. Mix well.
  3. Add the melted butter, eggs, and vanilla extract to the dry ingredients. Stir until just combined, being careful not to overmix.
  4. Fold in the chocolate chips and, if using, the chopped pecans.
  5. Pour the batter into the prepared baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not completely clean).
  7. Remove the cake from the oven and immediately sprinkle the mini marshmallows on top. Return to the oven for an additional 5 minutes, or until the marshmallows are slightly puffed and golden.
  8. Allow the cake to cool in the pan for at least 15 minutes before dusting with powdered sugar and cutting into squares.
  9. Serve warm or at room temperature. For an extra treat, top with whipped cream or vanilla ice cream.
