A delicious and hearty slow cooker French onion soup that is rich in flavor and perfect for any occasion.
Ingredients
- 2 tablespoons unsalted butter
- 4 large yellow onions, thinly sliced
- 1 teaspoon salt
- 1 teaspoon sugar
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 cup dry white wine (or additional beef broth)
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon black pepper
- 8 slices of French bread
- 2 cups shredded Gruyère cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, melt the butter over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
- Transfer the caramelized onions to the slow cooker. Add the minced garlic, beef broth, white wine, Worcestershire sauce, thyme, bay leaf, and black pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld together.
- About 30 minutes before serving, preheat your oven to 400°F.
- Arrange the slices of French bread on a baking sheet and toast in the oven until golden brown, about 5-7 minutes.
- Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted bread, and sprinkle generously with Gruyère cheese.
- Place the bowls on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth and use a plant-based cheese.
- Add a splash of sherry or brandy for an extra depth of flavor before serving.
