Ingredients

  • 2 tablespoons unsalted butter
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine (or additional beef broth)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 8 slices of French bread
  • 2 cups shredded Gruyère cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
  2. Transfer the caramelized onions to the slow cooker. Add the minced garlic, beef broth, white wine, Worcestershire sauce, thyme, bay leaf, and black pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld together.
  4. About 30 minutes before serving, preheat your oven to 400°F.
  5. Arrange the slices of French bread on a baking sheet and toast in the oven until golden brown, about 5-7 minutes.
  6. Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted bread, and sprinkle generously with Gruyère cheese.
  7. Place the bowls on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is bubbly and golden.
  8. Garnish with chopped parsley before serving.
