Ingredients

  • 1 pound Brussels sprouts, cleaned and halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 45 slices thick-cut bacon, chopped
  • 23 tablespoons hot honey
  • Oil spray or extra oil, as needed

Instructions

  1. Preheat the oven to 450°F.
  2. Wash and dry the Brussels sprouts, then halve them lengthwise.
  3. Toss the sprouts in a large bowl with olive oil, salt, pepper, and garlic powder.
  4. Lightly grease a sheet pan and arrange the sprouts cut side down in a single layer. Scatter chopped bacon pieces around them.
  5. Roast for 15–18 minutes, until the edges of the sprouts are golden and the bacon is crisp.
  6. Remove the pan from the oven and drizzle the hot honey over the sprouts and bacon. Toss gently to coat evenly.
  7. Return the pan to the oven and roast for an additional 5 minutes, or until the desired crispness is achieved.
  8. Transfer to a serving dish and enjoy with extra hot honey on the side.

Notes

  • Use fresh, firm Brussels sprouts for the best results.
  • To make hot honey at home, mix 1/2 cup honey with 1–2 teaspoons red chili flakes and heat gently.
  • For a vegetarian version, omit the bacon and add smoked paprika for a similar smoky flavor.
