Ingredients

  • 2 large russet potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the potatoes, then slice them into thin rounds, about 1/8 inch thick.
  3. In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and dried thyme. Add the potato slices and toss until they are evenly coated with the mixture.
  4. Stack the potato slices vertically in a muffin tin, pressing them down gently to hold their shape.
  5. Sprinkle the grated Parmesan cheese evenly over the top of each stack.
  6. Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden brown.
  7. Remove from the oven and let cool for a few minutes before carefully removing the stacks from the muffin tin.
  8. Garnish with chopped fresh parsley before serving.
