Roasted Garlic Parmesan Potato Stacks are a delicious and visually appealing side dish made with thinly sliced potatoes, garlic, and Parmesan cheese, baked to perfection.
Ingredients
- 2 large russet potatoes
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the potatoes, then slice them into thin rounds, about 1/8 inch thick.
- In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and dried thyme. Add the potato slices and toss until they are evenly coated with the mixture.
- Stack the potato slices vertically in a muffin tin, pressing them down gently to hold their shape.
- Sprinkle the grated Parmesan cheese evenly over the top of each stack.
- Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden brown.
- Remove from the oven and let cool for a few minutes before carefully removing the stacks from the muffin tin.
- Garnish with chopped fresh parsley before serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the olive oil mixture.
- Try using sweet potatoes for a different flavor profile and added sweetness.
