Description

Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and paprika until evenly coated.
  3. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and lightly browned.
  5. Remove from the oven and sprinkle the crumbled feta cheese over the hot sweet potato rounds. Drizzle with honey while still warm.
  6. If desired, garnish with chopped fresh parsley before serving.
