A delicious and healthy side dish featuring roasted sweet potato rounds topped with honey and feta cheese.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup crumbled feta cheese
- 2 tablespoons honey
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and paprika until evenly coated.
- Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and lightly browned.
- Remove from the oven and sprinkle the crumbled feta cheese over the hot sweet potato rounds. Drizzle with honey while still warm.
- If desired, garnish with chopped fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potato mixture before roasting.
- Try substituting goat cheese for feta for a different flavor profile.
