These easy Rotisserie Chicken Burritos are your new go-to for busy weeknights! Loaded with juicy shredded chicken, spicy beans, fluffy rice, melty cheese, and all your favorite toppings—every wrap is a handheld meal bursting with flavor and ready in no time.
Ingredients
4 large flour tortillas, warmed
1 small cooked rotisserie chicken (about 500 grams or 1 pound), shredded
2 tablespoons oil
1 small onion, peeled and diced
2 tablespoons fajita seasoning
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 can mixed beans in chilli sauce (400 grams or 14 ounces)
1 pack ready-cooked rice (250 grams or 9 ounces), plain or Mexican-style
3/4 cup Cheddar cheese, finely grated
2 tablespoons pickled jalapeños, chopped
A small bunch of fresh coriander (cilantro), roughly chopped
4 teaspoons tomato salsa
4 teaspoons sour cream
1 little gem lettuce, washed and torn
Instructions

Shred the meat from the rotisserie chicken into bite-size pieces.

In a large frying pan over medium-high heat, warm the oil. Add the diced onion, shredded chicken, fajita seasoning, salt, and pepper. Cook for 5–6 minutes, stirring regularly until the chicken is hot and the onion is softened.

Push the chicken to one side of the pan and add the beans with their sauce. Cook for another 5–6 minutes, stirring and lightly mashing the beans as they warm through. Stir the chicken occasionally to prevent sticking.

Cook the rice according to the package instructions, usually about 2 minutes in the microwave.

Lay each warm tortilla on a large piece of foil. Spoon a portion of rice, chicken, and beans into the lower half of each tortilla. Top with grated cheese, chopped jalapeños, fresh coriander, salsa, sour cream, and lettuce.

Roll each burrito tightly, tucking in the sides as you go. Wrap in foil and twist the ends to secure. Serve warm.
Notes
For meal prep, assemble burritos without lettuce and sour cream, then wrap tightly in foil. Refrigerate for up to 1 day. To reheat, place wrapped burritos in a preheated oven at 180°C (350°F) for 15–20 minutes.
You can customize fillings—try black beans, corn, or avocado for variety.
Swap Cheddar for Monterey Jack or Pepper Jack for a different cheesy twist.
