Delicious salmon meatballs served with a creamy garlic sauce, perfect for a healthy meal.
Ingredients
- 1 pound fresh salmon fillets, skin removed and bones discarded
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- For the garlic sauce:
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a food processor, add the salmon fillets and pulse until finely chopped but not pureed. Transfer to a large bowl.
- Add breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, lemon zest, salt, and pepper to the bowl with the salmon. Mix until well combined.
- Using your hands, form the mixture into meatballs, about 1 inch in diameter. Place the meatballs on the prepared baking sheet.
- Drizzle olive oil over the meatballs and bake in the preheated oven for 15-20 minutes, or until cooked through and golden brown.
- While the meatballs are baking, prepare the garlic sauce by combining Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Mix until smooth and well combined.
- Once the meatballs are done, serve them warm with the garlic sauce on the side for dipping.
Notes
- For added flavor, consider mixing in some chopped green onions or dill into the meatball mixture.
- You can also substitute the salmon with canned salmon for a quicker option.
- Serve the meatballs over a bed of greens or with whole grain pasta for a complete meal.
