Description

Delicious salmon meatballs served with a creamy garlic sauce, perfect for a healthy meal.


Ingredients

  • 1 pound fresh salmon fillets, skin removed and bones discarded
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • For the garlic sauce:
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a food processor, add the salmon fillets and pulse until finely chopped but not pureed. Transfer to a large bowl.
  3. Add breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, lemon zest, salt, and pepper to the bowl with the salmon. Mix until well combined.
  4. Using your hands, form the mixture into meatballs, about 1 inch in diameter. Place the meatballs on the prepared baking sheet.
  5. Drizzle olive oil over the meatballs and bake in the preheated oven for 15-20 minutes, or until cooked through and golden brown.
  6. While the meatballs are baking, prepare the garlic sauce by combining Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Mix until smooth and well combined.
  7. Once the meatballs are done, serve them warm with the garlic sauce on the side for dipping.

Notes

  • For added flavor, consider mixing in some chopped green onions or dill into the meatball mixture.
  • You can also substitute the salmon with canned salmon for a quicker option.
