A delicious twist on traditional cheesecake, combining the flavors of salted caramel and apple pie.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup salted caramel sauce (plus extra for drizzling)
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup sugar, and 1/2 teaspoon cinnamon. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with 1 cup sugar and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until fully combined.
  6. In a separate bowl, toss the diced apples with lemon juice, 1/2 teaspoon cinnamon, and nutmeg. Fold the apple mixture into the cream cheese batter, then gently swirl in the salted caramel sauce.
  7. Pour the cheesecake batter over the cooled crust in the springform pan. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.
  10. Before serving, drizzle with additional salted caramel sauce and sprinkle with sea salt.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the cream cheese mixture.
