Description
Sardine Fish Cakes are a delicious and easy-to-make dish that combines the rich flavor of sardines with creamy mashed potatoes and crispy breadcrumbs.
Ingredients
- 1 can (15 ounces) sardines in olive oil, drained and mashed
- 1 cup mashed potatoes (about 2 medium potatoes)
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup all-purpose flour (for dusting)
- Vegetable oil (for frying)
Instructions
- In a large bowl, combine the mashed sardines, mashed potatoes, breadcrumbs, onion, parsley, egg, Dijon mustard, garlic powder, salt, black pepper, and paprika. Mix until well combined.
- Shape the mixture into patties, about 2 inches in diameter and 1/2 inch thick. Place the patties on a plate and refrigerate for at least 30 minutes to firm up.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, carefully dust each patty with flour and place them in the skillet, cooking in batches if necessary.
- Fry for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fish cakes from the skillet and drain on paper towels.
- Serve warm with lemon wedges or your favorite dipping sauce.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the mixture.
- Substitute canned tuna or salmon for sardines if preferred, adjusting seasonings to taste.
