Description

Sardine Fish Cakes are a delicious and easy-to-make dish that combines the rich flavor of sardines with creamy mashed potatoes and crispy breadcrumbs.


Ingredients

  • 1 can (15 ounces) sardines in olive oil, drained and mashed
  • 1 cup mashed potatoes (about 2 medium potatoes)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup all-purpose flour (for dusting)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the mashed sardines, mashed potatoes, breadcrumbs, onion, parsley, egg, Dijon mustard, garlic powder, salt, black pepper, and paprika. Mix until well combined.
  2. Shape the mixture into patties, about 2 inches in diameter and 1/2 inch thick. Place the patties on a plate and refrigerate for at least 30 minutes to firm up.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  4. Once the oil is hot, carefully dust each patty with flour and place them in the skillet, cooking in batches if necessary.
  5. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  6. Remove the fish cakes from the skillet and drain on paper towels.
  7. Serve warm with lemon wedges or your favorite dipping sauce.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the mixture.
  • Substitute canned tuna or salmon for sardines if preferred, adjusting seasonings to taste.
