Ingredients

  • ½ pound smoked sausage or kielbasa, sliced into ¼-inch thick rounds

  • 2 pounds baby creamer potatoes, halved

  • 15 ounces canned green beans, drained

  • ⅛ cup vegetable oil

  • ¼ cup butter

  • 1 cup chopped onions

  • 3 cloves garlic, minced

  • 1 teaspoon Slap Ya Mama® Cajun seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon black pepper

  • ½ teaspoon red pepper flakes

  • ¼ cup water


Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with non-stick spray or oil.

  2. Season the Potatoes:
    Place the halved baby potatoes in a large zip-top bag or bowl. Add vegetable oil, Cajun seasoning, garlic powder, black pepper, and red pepper flakes. Seal and shake (or toss) until the potatoes are evenly coated.

  3. Cook the Sausage:
    In a skillet over medium-high heat, add the sliced sausage and ¼ cup of water. Cook until the sausage is browned and water evaporates, about 5–7 minutes. Let cool slightly and then add to the potato mixture.

  4. Sauté the Aromatics:
    In the same skillet, melt the butter and sauté chopped onions and minced garlic for 3–4 minutes, until softened and fragrant. Let cool slightly and add to the potato-sausage mix. Shake or toss to combine.

  5. Add the Green Beans:
    Gently fold in the drained green beans, being careful not to break them up too much.

  6. Bake the Casserole:
    Transfer the entire mixture to the prepared baking dish. Cover tightly with foil. Bake for 40–45 minutes or until the potatoes are fork-tender.

  7. Serve and Enjoy:
    Carefully remove the dish from the oven and peel off the foil. Serve hot, garnished with fresh herbs if desired.
