Description

A flavorful and healthy dish featuring sautéed bok choy, carrots, and bell peppers, perfect as a side or main dish.


Ingredients

  • 2 tablespoons vegetable oil
  • 4 cups bok choy, chopped
  • 1 cup carrots, julienned
  • 1 cup bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  3. Add the julienned carrots and sliced bell peppers to the skillet. Stir-fry for 3-4 minutes until they begin to soften.
  4. Add the chopped bok choy to the skillet and continue to stir-fry for another 2-3 minutes, until the bok choy is tender but still vibrant green.
  5. Drizzle the soy sauce and sesame oil over the vegetables, stirring to combine. Season with salt and pepper to taste.
  6. Remove from heat and transfer to a serving dish. Garnish with sesame seeds if desired.

  • For added protein, toss in some cooked chicken, shrimp, or tofu during the last few minutes of cooking.
