Description
A delicious and healthy sautéed dish featuring bok choy, carrots, and bell peppers, perfect as a side or main dish.
Ingredients
- 2 tablespoons vegetable oil
- 4 cups bok choy, chopped (about 1 bunch)
- 1 cup carrots, julienned (about 2 medium carrots)
- 1 cup bell peppers, sliced (any color, about 1 large pepper)
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add the julienned carrots and sliced bell peppers to the skillet. Stir-fry for 3-4 minutes until they begin to soften.
- Add the chopped bok choy to the skillet and continue to stir-fry for another 3-4 minutes until the bok choy is tender but still bright green.
- Pour in the soy sauce and sesame oil, tossing everything to combine. Season with salt and pepper to taste.
- Remove from heat and transfer to a serving dish. Garnish with sesame seeds if desired.
Notes
- For added protein, consider adding cooked chicken, shrimp, or tofu during the stir-frying process.
- Experiment with different vegetables like snap peas or mushrooms for a unique twist on this dish.
