Ingredients

  • 2 tablespoons olive oil
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the zucchini and yellow squash to the skillet. Cook for 3-4 minutes, stirring occasionally, until they start to soften.
  4. Add the red bell pepper and broccoli florets. Continue to sauté for another 4-5 minutes until the vegetables are tender but still crisp.
  5. Stir in the cherry tomatoes, oregano, thyme, salt, and pepper. Cook for an additional 2 minutes until the tomatoes are slightly softened.
  6. Remove from heat and garnish with fresh parsley before serving.
