  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again after a few minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are browned and tender.
  3. Add the minced garlic to the skillet with the mushrooms and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the blanched green beans, salt, and black pepper. Cook for another 3-4 minutes, stirring occasionally, until the green beans are heated through.
  5. Drizzle the balsamic vinegar over the mixture and toss to combine. Cook for an additional minute, then remove from heat.
  6. Garnish with fresh parsley if desired and serve warm.
