Ingredients
- 2 tablespoons olive oil
- 1 pound fresh mushrooms, sliced
- 3 cloves garlic, minced
- 10 ounces fresh spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are golden brown and have released their moisture.
- Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Add the fresh spinach to the skillet, stirring until it wilts, about 2-3 minutes.
- Season with salt, black pepper, and red pepper flakes (if using).
- Drizzle with lemon juice and toss to combine.
- Remove from heat and serve warm.
Notes
- For added flavor, sprinkle some grated Parmesan cheese on top before serving.
- You can substitute kale or Swiss chard for spinach for a different taste and texture.
