Description

A quick and healthy dish featuring sautéed spinach and mushrooms, perfect as a side or light meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound fresh mushrooms, sliced
  • 3 cloves garlic, minced
  • 10 ounces fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are golden brown and have released their moisture.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  4. Add the fresh spinach to the skillet, stirring until it wilts, about 2-3 minutes.
  5. Season with salt, black pepper, and red pepper flakes (if using).
  6. Drizzle with lemon juice and toss to combine.
  7. Remove from heat and serve warm.

Notes

  • For added flavor, sprinkle some grated Parmesan cheese on top before serving.
  • You can substitute kale or Swiss chard for spinach for a different taste and texture.
