  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh chives (or 2 tablespoons dried chives)
  • 1/4 cup olive oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the grated zucchini, olive oil, and eggs. Mix until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  4. Gradually add the dry ingredients to the zucchini mixture, stirring until just combined. Be careful not to overmix.
  5. Fold in the shredded cheddar cheese, grated Parmesan cheese, and chopped chives until evenly distributed.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
