Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/4 cup pitted Kalamata olives, roughly chopped
  • 2 tablespoons capers, rinsed and drained
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 pound white fish fillets (such as cod or tilapia)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the diced tomatoes, olives, capers, red pepper flakes, and oregano to the skillet. Stir to combine and let the mixture simmer for about 10 minutes, allowing the flavors to meld.
  4. Season the fish fillets with salt and pepper on both sides. Carefully place the fillets into the skillet, spooning some of the sauce over the top.
  5. Cover the skillet and cook for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
