Savory Ham and Cauliflower Breakfast Muffins are a delicious and healthy breakfast option packed with protein and flavor.
Ingredients
- 1 cup cauliflower rice (fresh or frozen)
- 1 cup diced cooked ham
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon baking powder
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the oven to 375°F. Grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, combine the cauliflower rice, diced ham, and shredded cheddar cheese.
- In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, black pepper, paprika, and baking powder until well combined.
- Pour the egg mixture into the bowl with the cauliflower and ham, stirring until everything is evenly coated.
- Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full. If desired, sprinkle chopped parsley on top for garnish.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top. Allow to cool for a few minutes before removing from the tin.
- Serve warm or at room temperature. These muffins can be stored in an airtight container in the refrigerator for up to 4 days.
Notes
- For added flavor, try mixing in some diced bell peppers or spinach.
- You can also substitute the ham with cooked bacon or sausage for a different protein option.
