Ingredients

  • 1 cup cauliflower rice (fresh or frozen)
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon baking powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375°F. Grease a muffin tin or line it with muffin liners.
  2. In a large mixing bowl, combine the cauliflower rice, diced ham, and shredded cheddar cheese.
  3. In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, black pepper, paprika, and baking powder until well combined.
  4. Pour the egg mixture into the bowl with the cauliflower and ham, stirring until everything is evenly coated.
  5. Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full. If desired, sprinkle chopped parsley on top for garnish.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top. Allow to cool for a few minutes before removing from the tin.
  7. Serve warm or at room temperature. These muffins can be stored in an airtight container in the refrigerator for up to 4 days.
