Description

This bold and flavorful One-Pan Sausage & Peppers dish is the weeknight dinner hero you didn’t know you needed. With sweet and spicy sausage, roasted bell peppers, caramelized onions, and garlic all baked to perfection on a single sheet pan, it’s minimal effort with maximum taste. Serve it over rice, stuff it in a hoagie, or toss it with pasta—your call!


Ingredients

  • 12 to 16 ounces pre-cooked sausage, sliced into rounds (use a mix of andouille and Italian for extra flavor)

  • 2 red bell peppers, sliced

  • 2 green bell peppers, sliced

  • 1 medium yellow onion, sliced

  • 2 tablespoons olive oil

  • 1 tablespoon Italian seasoning

  • 1 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 3 cloves garlic, minced


Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper for easy cleanup.

  2. Prepare the Ingredients:
    Slice the sausage, bell peppers, and onion. Place everything on the prepared baking sheet.

  3. Season and Toss:
    In a small bowl, whisk together the olive oil, Italian seasoning, kosher salt, black pepper, and minced garlic.
    Pour the seasoning mixture over the sausage and veggies. Toss everything on the sheet to coat evenly.

  4. Roast to Perfection:
    Spread the mixture into a single layer.
    Roast for 35 to 40 minutes, stirring once halfway through, until the sausage is browned and crispy and the vegetables are soft and caramelized.

  5. Serve and Enjoy:
    Serve hot over rice, in a hoagie roll with melted cheese, tossed with pasta, or over greens for a hearty salad.

Notes

  • For extra heat, use hot Italian sausage or add red pepper flakes to the seasoning mix.
